Pasta with Lentils and Lemon

It has been some time ago since I posted a recipe. So it's time for a new one. I really like not very common combinations and so is the combination of pasta with lentils. It takes not more than 20 minutes to prepare. Easy peasy

For 2 persons. Nice with a good salad.
Cut one onion and one clove of garlic in little pieces.
Boil water for the pasta and add the pasta.
Put one table spoon of butter or two table spoons of olive oil in a frying pan and let it heat.
Add the onion and garlic. Let it fry for 3 minutes.
Add 150 ml of vegetable broth, 150 ml of cream and 50 grams of red lentils.
Let it cook for 10-12 minutes. Check if the lentils are soft enough for your taste.
In the mean time cut some parsley, grate the skin of 1/4 of a lemon.
After 10-12 minutes mix the parsley, lemon zest and the juice of half a lemon with the 'sauce'.
Stir and let it cook for 2 more minutes.
Drain the pasta and mix it with the 'sauce'.
Note:
1. I used 'cream' made from soybeans.
2. For 2 persons. Nice with a salad.

Enjoy.

Strawberry Cake

Finally I'm a bit more relaxed. Last week was so stressful and next week will be the same. Or worse. But weekend for now. Which means time to write, read and eat. Look what I made. Seriously, it's de-li-cious.

And a song I'm starting to like. I've never been a big fan of Racoon (dutch band) but their last single is quite nice. Listen to it here and maybe you start to like it as well.

Mint chocolate chip cookies

I love almost everything with a mint flavour. Also toothpaste. Although I'm not really eating it. So when I read this recipe for mint chocolate chip cookies I really needed to make them. After trying them you will never buy the cookies in the supermarket again.

It's quite easy. What you need to do:
Chop the leaves of two sprigs of mint and 100 grams of dark chocolate in pieces. Stir one yolk with 100 grams of sugar. Add one tablespoon of baking powder, the mint leaves, 140 grams of flour and a pinch of salt. Mix it quickly. After that, add the chocolate and make a roll of the dough with your hands. Put the roll into some plastic wrap and leave it in the refridgerator for at least an hour. Heat the oven at 180 degrees and put some baking paper on a baking tray. Then cut the roll into slices and put them on the baking tray. Bake the cookies in the oven for 10 minutes and let them cool down before eating.

Here's a quick picture of the result:

Soft chocolate cakes

Last night we cooked a very nice dinner. On the menu was a delicious gnocchi with tomatoes and mozzarella. It was REALLY italian. And some soft chocolate cakes for dessert.
Here's the recipe (found it on Elle.nl):
Melt 150 grams of dark chocolate and 80 grams of unsalted butter. Whisk 4 eggs and 80 grams of sugar until it's a light yellow and kind of 'fluffy' mixture. Add two table spoons of flour and the chocolate-butter. Blend it. Put half of the 'dough' into 6 cups, put 2 pieces of chocolate (white, milk or dark) into the dough and top it off with the rest of the dough. The cups need to be in the oven for 12 minutes at 220 °C Let the cakes cool down for 15 minutes and enjoy.

Orgastic chocolate mousse

Just made the best chocolate mousse ever. Really.
Put 75 grams of marshmallows, 25 grams of butter (unsalted), 100 grams semisweet chocolate, 1 tbs cacoa and 50 ml boiled water in a pan. Something like this:

Put it on the stove and let it melt on gentle heat. Stir every now and then. When everything's melted, take pan of the stove and let it cool down. Meanwhile, whip 125ml of cream until thick. Fold it into the chocolate mixture. DONE. Leave it in the frigde for an hour or until it's thick enough. It's for four persons. Or a lot for two.
